Each of our wedding packages includes a choice of five different menu options. Within each option, our clients have a great deal of choice as to what they will serve their guests. Beyond this, each couple has the option of upgrading what is included or casting it all aside and working with Anne to create a completely custom event. About 60% of our couples go with one of the standard inclusions and most of them will modify those menus, at least slightly, perhaps if only to address a vegetarian or gluten free need, etc. Another 20% or so of our clients, once they are into the planning process, work with our Event Management team to select from a second tier of menus, still highly affordable, once they have access to our planning website. Another 20% or so of our clients start from scratch and create their own menus. Such creativity is the origin of what eventually became one of our standard upgraded menus from which our couples can choose: our Gourmet Southern Package (example below) Less than a fraction of a percent of a couple remove catering from their packages.
The five included menus from which you can choose, if you choose to keep the meal in your contract are:
Option #1 FAJITA BAR: with two of the following (Chipotle Chicken; Pork Carnitas; Citrus Tofu; or Marinated Flank steak (add $2/pp) with grilled bell peppers & onions, chipotle black beans, Mexican rice, guacamole, pico de gallo, shredded cheese, shredded romaine lettuce, cilantro-lime sour cream, flour or corn tortillas and chips & salsa. Sweet and unsweetened iced tea are also included.
Option #2 BBQ with two of the following: (Pulled Pork, Pulled or Chopped Chicken, Bone in Chicken, Seitan (add $1.50/pp), Chopped OR Sliced Beef Brisket OR Ribs (add $2.50/pp) with choice of three delicious sides and a variety of BBQ sauces, sandwich buns OR cornbread OR 1/2 sandwich buns and 1/2 cornbread. Sweet and unsweetened iced tea are also included.
OPTION 3 Classic Elegance: with one of the following: Herb Roasted Pork or Chicken OR Tuscan Pork or Chicken plus Tomato Basil Confit or Caribbean Jerk Pork or Chicken plus Mango Salsa with roasted potatoes OR mashed potatoes, a green salad, artisan breads, and 1 additional side from the BBQ Buffet menu above. Sweet and unsweetened iced tea are also included.
OPTION 4 LASAGNA: with one of the following: Traditional or Chicken, Spinach & Bechamel and with one of the following: Marinara, or Mushroom Leek & Spinach, or Kalamata, Artichoke, Sun-dried Tomato and Feta with caesar salad and garlic bread. Sweet and unsweetened iced tea are also included.
OPTION 5 BRUNCH (any time of day) includes: scrambled eggs, chicken & waffles + peach syrup, creamy grits, a green salad + berries, pecans & chèvre. Sweet and unsweetened iced tea are also included.

Once a couple books, the couple gains access to a planning website that includes a chapter on catering. In this chapter the couple will find more information about our basic inclusions as well as information about anything they might wish to customize or upgrade. Examples of just a few of the standard upgraded menu options you might consider:
Choice of one of the following: Chicken Saltimbocca OR Cocoa Rubbed Flank Steak + Caramelized Onions & Bleu Cheese + Arugula OR Roasted Salmon + Chef’s Rub & Hickory Glaze with a choice of one side, one salad, artisan bread, sweet and unsweet tea.
The above are just a few of the standard options. You have the ability to completely customize. One of our previous couples did just this and we liked it so much, we started to include it as a standard upgraded option. We include it here so you can see an example of what was a custom menu for one of our recent couples. Here is our 4 Station Gourmet Southern Menu Example:
- Mini Sweet Potatoes Biscuits + Brown Sugar & Espresso Bacon, Jalapeño Jam, Fresh Basil & Smoked Gouda
- Mini Black Pepper Biscuits + Fried Green Tomato, Pimento Cheese & Mississippi Comeback Sauce
- Hoppin’ John Shooters + Savory Black Eyed Peas, Bacon, Rice & Tomato Jam & Fresh Herbs

BREAD & SALAD STATION
- Mixed Greens + Mixed Berries, Smoked Gouda, Toasted Pecans & Berry Vinaigrette
- Bell Peppers, Red Onion, Jalapeño, Grape Tomato, Cucumber & Celery Salad + Mustard Seed Vinaigrette
- Romaine Lettuce + Grape Tomatoes, Cucumbers & Creamy Parmesan Peppercorn Dressing OR Dijon Vinaigrette
- Corn Bread & Sweet Potato Rolls + Honey Butter
SOUTHERN BBQ STATION:
- Pulled Pork Sliders + cole slaw & BBQ Sauce
- Tea-Brined Fried Chicken & Waffles + Peach Horseradish Maple Syrup
- Baked Mac n’ Cheese + Fried Onion Topping
- Low Country Collard Greens
GRITS BAR STATION:
- Southern Grits are served with the following accouterments:
- Roasted Grape Tomatoes, Bacon Crumbles, Smoked Gouda & Cheddar, Fresh Jalapeños, Scallions, Sauteed Shrimp & Hot Sauce.
- And one sauce:
- Creole, Creamy Tomato Basil Parmesan OR Lemon & White Wine
If what we offer is not exactly what you seek, you are free to dream and whip up in collaboration with Anne or you can remove catering completely and go with your own caterer. We hope you understand that you have many options. If you go with a basic menu or a standard upgrade you will be going with time tested favorites, as indicated by our 5 star reviews and the recognition and awards received by our catering partner: Anne Foreman. At Hidden River Events. If you go with a completely custom choice, you’ll be adding to the diversity of our experience at Hidden River and, who knows, perhaps the menu you choose will live on afterwards such that other couples can learn from your experience. Whatever you choose, if you go with our preferred, third party caterer, the stress of managing the catering is taken off the table so that you can enjoy yourselves and, because we have pre-brokered the cost of the basic menu inclusions, the price cannot be matched.
